Frequently Asked Questions

We take our decaf seriously, because we want to honor those of you who love coffee and want to drink it for both pleasure and health benefits but prefer to avoid caffeine. Purity CALM (99.9% decaffeinated) and BALANCE (1/3 caffeinated, 2/3 decaffeinated) roasts are made from the same highly vetted coffee we use in our other blends, and is sent directly from the farm to the Mountain Water® decaffeination facility in Mexico. The proprietary Mountain Water® Process (MWP) removes more than 99.9% of caffeine, making it the best decaffeination method in the industry. Unlike solvent-based methods, MWP avoids the use of chemicals that can leave behind toxic residues. In addition, our roasting partner ensures that all equipment is thoroughly cleared of any leftover regular coffee before roasting Purity CALM or BALANCE. The decaf is then roasted to a level that retains chlorogenic acids (CGA) while balancing sweetness and subdued acidity. The result is the highest quality decaf coffee on the market: specialty grade, certified organic, Smithsonian Bird Friendly, regeneratively farmed, and Mountain Water® decaffeinated.

We tend to avoid broad claims like "low acid coffee" because everyone’s body is unique. What feels gentle on one person’s stomach may not for someone else, depending on individual health needs and sensitivities. That said, coffee with a pH of 5.0 or higher is generally considered lower in acid (the higher the pH, the lower the acidity). Among our roasts, EASE, our Dark Roast, is our lowest-acid option. Here are our approximate measured pH values (please note these are based on standardized lab conditions and can vary slightly): FLOW: 5.10 PROTECT: 4.95 EASE: 5.19 CALM: 5.10 BALANCE: 4.95–5.1 The brewing method, water temperature, grind size, and even your water source (especially mineral content and pH) can all influence the final acidity of your cup. For example, cold brew tends to yield a less acidic result than hot pour-over.

Purity Coffee is 100% Organic Arabica beans, and we use a rotating blend of beans from Central and South America. Purity Coffee is also specialty grade, Rainforest Alliance Certified, Smithsonian Bird Friendly, Demeter Biodynamic Certified, and we practice regenerative farming techniques as well!

We specifically source high altitude/organically grown Arabica beans from Central and South America. The elevations range from 3500-5500+.

The only ingredient in all Purity Coffee (all roasts) is 100% Organic Arabica Beans. The country of origin, variety, processing method, and roasting (different temperatures, lengths of time) of the coffee can highlight some of the naturally occurring flavors/compounds. For that reason you'll see flavor notes like “chocolate” or “almond” in the product descriptions, but those refer to naturally occurring taste characteristics. These are just tasting comparisons, not added ingredients. You can feel confident that your cup contains only pure, organic coffee! Purity Coffee is gluten and nut free, and our coffee does not come in contact with any gluten or nuts along the supply chain. Purity Coffee is free of the top eight allergens, our roasting facility is FSMA compliant, and we do not use latex gloves. We are certified USDA organic as well as specialty-grade and lab tested for molds and mycotoxins.

While all of our coffees are of high quality (pesticide-free organic, no mold or mycotoxins, minimal levels of PAH, high in antioxidants) and can generally be enjoyed by everyone, we’ve begun experimenting with different cultivars and specific roast profiles to optimize the levels of certain compounds linked by science to specific health outcomes. FLOW: Our original flagship medium roast coffee. It's packed with antioxidants and optimized for overall health. FLOW gives a clean, sustained energy lift for improved physical and mental performance. The taste profile includes roasted nuts, dark chocolate, and juicy apple like high notes. EASE: Our dark roast coffee. With prebiotic benefits and lower acidity to help ease digestion, this blend is perfectly balanced to support gut health. The taste profile includes dark chocolate, roasted walnut, and brown spice. CALM: Our naturally decaffeinated medium roast coffee. It is crafted to deliver a similar flavor and bounty of antioxidants found in our FLOW coffee, while avoiding the caffeine. PROTECT: A light-medium roast coffee crafted for liver vitality. This single origin coffee is honey processed for a sweeter flavor, and has the highest level of CGA (antioxidants) among all of our coffees. With high levels of bioactive compounds to support liver health and function, PROTECT also contains 10% more antioxidants than FLOW. BALANCE: Our 1/3 caffeinated medium roast crafted for those that are mindful of their caffeine intake. Using a precise blend of regular and naturally decaffeinated Swiss Water beans, this coffee provides high antioxidant activity with less caffeine.

We regularly third party test our coffees for a variety of things, and gluten is a part of this testing. If you are looking at the whole bean product pages, you'll find a link on each roast that says "Click here for more info on X". Moving to that page has a ton of information about the roast, and at the very bottom you can see testing for each (both a nutrient/mineral profile and contaminants). The contaminant COA will contain the gluten test results. Although Purity Coffee is kosher naturally, we do not have a Kosher Certification at this time.

Research on coffee and histamine is not extensive, but it all points to low-quality and unripe coffee used in roasting. In high-quality coffee, histamine in green, roasted, and coffee beverages may not be found at all, or may be present in small concentrations. However, even if concentrations are low, the presence of histamine could be enough to cause adverse effects in histamine-sensitive individuals or those with a higher load of amines that their bodies are trying to process. It is difficult to explain why some people react to coffee one way, and others another way. Of course, all of us are different with our own internal chemistry, biology, and functionality of our many glands, organs, and moving parts. Similarly, every coffee is different with its cocktail of compounds in different quantities. Regarding other contaminants and compounds in low-quality coffee, several are likely to affect those with MCAS: Molds, mycotoxins, pesticide residues, yeasts, and other biogenic amines that are common in coffee, such as putrescine, cadaverine and others. All these can potentiate histamine toxicity and other stresses on the mast cells. Paying attention to all aspects of coffee brewing is also important: Water, equipment, filters, grinders and flasks all could produce reactions, rather than the coffee itself. In terms of what Purity Coffee does differently: Only the top quality (called “specialty grade”), certified organic, hand-picked, ripened fruits are picked to ensure the coffee is not underripe or problematic. We test for antioxidants and other nutrients and choose coffees that are at high levels. We then roast conscientiously to retain as much antioxidant capacity as possible for each type of coffee. Finally, we employ strict food safety measures and current Good Manufacturing Practices (cGMPs). We also lab test our coffees for pesticides, mold, mycotoxins, heavy metals, and other contaminants that could cause problems. We only choose the cleanest and purest coffees. All of our coffees are grown on regenerative organic farms, meeting the highest standards in the world for soil health. Although we cannot establish a direct link between our farming practices and the positive effect this might have on histamine in our coffee, this is something we are studying. We just know that what is good for the environment is good for us as well. If you know you are particularly sensitive to caffeine, our Mountain Water processed decaffeinated coffee (Calm) tastes exceptional, is loaded with CGA, and is produced using the same high standards for health and purity.

Our sachets are made from NeoSoilon®, a plant based bioplastic derived from non GMO sugarcane. It’s completely free from petroleum based plastics and designed to be food safe, non toxic, and industrially compostable. NeoSoilon® is created through a natural fermentation and polymerization process that gives it plastic-like flexibility (meaning it melts, seals, and forms a fine mesh) but it’s a bio-based alternative, not a traditional plastic. It’s also BPA-free, phthalate-free, and FDA-approved for food contact, so it doesn’t carry the same health concerns as conventional plastics. If you prefer to avoid any plastic materials (even plant-based ones), we recommend our whole bean or ground coffee, which can be brewed completely plastic free using a glass pour over or stainless steel French press. Each sachet is individually sealed with nitrogen to remove oxygen and maintain freshness. Packaged this way, our coffee maintains its peak freshness and aromatics for up to 12 months.
